Paleo/Primal Spaghetti and Meatballs

What is a Paleo or Primal diet? I could probably talk for hours about this. Instead, I will  let you know what it means to me in general terms.

Paleolithic times was one of the last points in our evolutionary timeline when we weren’t seeing any  autoimmune diseases, cardiovascular disease, diabetes, high cholesterol and blood pressure, or obesity. The list goes on.

It was survival of the fittest. There weren’t any drugs around to keep us moving. We used food, activity and sleep to keep us running at our healthiest. Our bodies are designed to live and eat a certain way. And that is the basis of the hunter gatherer and Paleo/Primal lifestyle. The easiest description is No Grains, No Dairy and No Legumes. Moderate exercise and lots of walking and sleep. We will get into specifics another time.

It is not about sleeping on a rock and grunting. It is about finding out how we were meant to lead our lives and mimicking this as much as possible in modern times. Just becuase something wasn’t around in Paleolithic times does not mean its bad. We have to weigh out the pros and cons and see if it benefits us in any way.

Spaghetti and Meatballs

Spaghetti Ingredients:
1 large spaghetti squash.
That’s it.

Meatball Ingredients:
2 Pounds of ground meat. (Lamb, Beef, whatever you have on hand)
1 Pound Italian Sasuage
Choice of Veggies
Celery
Mushrooms
Carrots
Olives
Onions
or whatever you want to throw in.
3 eggs
1/2 Cup almond meal
Spices
Oregano
Garlic Powder
Black Pepper
Basil
I usually just toss in an amount that looks good. This is a pretty laid back recipe.

Preheat oven to 400•. Cut squash in half, scrap out seeds and place cut side down on a baking sheet. Toss in the oven for 40-45 minutes depending on size of squash. You will know its done when you can easily use a fork to separate into strands.
For the meatballs mix all the ingredients together and form into meatballs and place in a 9×13 baking dish. These will only take 25-35 minutes depending on size at 400•.

Warm your tomato sauce and serve.

This is also a great dish for your slow cooker. Just form meatballs, place in your slow cooker and cover with your tomato sauce. Leave on for 8 hours.

    What are you using for the sauce? Just a jar of spaghetti sauce off the shelf?

    Yes, sorry. I have been asked this a couple of times already. I just use Trader Joe’s Organic Mushroom Marinara.

    I should add, if you want to make this in the slow cooker I would use
    1 16oz can of diced tomatoes (or you can cut up fresh one’s in the summer)
    1 can of tomato paste
    Same spices as per the meatballs, but I use diced garlic instead of powder.
    Salt and pepper to taste
    Cover meatballs and cook.
