I have written a little about breakfast in the past, but I understand how hard it is to come up with quick breakfast ideas. We are in a household like many other American families, where we are up early and out of the house quick. But with our eating habits changing we have had to make some sacrifices. One was to sit down and eat breakfast. Missing breakfast isn’t a big deal you can just use that as your intermittent fasting, but I am so hungry in the morning there is no way I could miss breakfast.
Most days we will have eggs and bacon. Pretty simple. We like to mix it up with adding sauerkraut, avocados, smoked salmon, any kind of chopped veggies, etc. Sometimes though, you need a break from your usual. Most of the time for me that’s just some leftovers. I actually love curry for breakfast. Also we will make some waffles or pancakes (recipe to follow) and just reheat them. Making meals ahead of time on a sunday helps out a ton.
Fruit smoothies. We make these when we know we will be running around. We usually just add some So Delicious coconut milk, berries, maybe a banana and some ice.
This will last us two days

There are a ton of ways to do egg muffins google paleo egg muffins and other type of breakfast and a ton of great ideas will come up. There is a huge Paleo community online. Get out there and check around.
Still with all this info you will keep coming across people telling you to get out of that breakfast mentality and just eat. So if you are in a hurry in the morning just make some food the night or weekend before and reheat it. Super simple.
1/3 Cup Coconut Milk (Full Fat)
1/2 Cup Applesauce (A banana would also work really well)
1 Tablespoon vanilla
1/2 teaspoon baking soda
1/2 Cup Coconut flour
coconut oil for frying
Mix all your wet ingredients together then add in flour and baking soda. Heat oil in a pan and cook away. These are really good with berries or almond butter as a topping. If you want enough for left overs just double the recipe. Also, depending on how you like your pancakes. Thicker vs. thinner you might want to add a little more coconut milk.
