Really Quick!

Quick meal ideas. I am sure this is a common problem in many households. I know it is in ours. The biggest problem is that I like to cook and am always trying out new recipes. This can be a little time consuming. And while I get home around 6, Nolan our son is already hungry. And he is not very patient when it comes to food. Jamie tries to help out the best she can, but when you have a 21 month old running around the house getting into everything cooking isn’t the easiest task to complete.

So, lately we have been trying to come up with quicker meal options. My next few posts will have ideas and recipes for quick meals. I know quick is a general term and others might not consider these quick. The thing is we do not microwave our food and do want to make the effort to eat healthy and that will require a little more time. Its worth it to us. So by quick I mean around 15-45 minutes to make a meal.

This week we will start you out with Country Fried Steak and Mashed Cauliflower. This whole meal took no more than 30 minutes.

Country Fried Steak
Ingredients:
2 cubed steaks
1/2 onion
1/4 Cup total of Coconut flour and almond flour (not a 1/4 Cup each.)
Onion Powder
Garlic Powder
Salt N Pepper
Paprika
3/4 Cup Beef Broth
3 Tbs Coconut Oil

Season Steaks with the spices. The coat them in the flour on both sides. Set steaks aside. Put the Coconut oil in your on medium high. Just before the smoke point. Add the steaks to the pan and fry on each side for about 5 minutes. Set steaks aside and add the onion to the pan. Reduce heat to medium and cook the onions until translucent. Add in the left over flour and add in the broth. Mix it up then add the steaks back in. Cook for about 10 more minutes. The sauce will thicken up. This recipe could easily be doubled for more people.

Mashed Cauliflower
Ingredients
Cauliflower
Garlic minced
Coconut milk (You could totally use butter if you want)

Cut up and steam the cauliflower then mash it up with the garlic and coconut milk. Super simple.

    Can I tell you guys that I LOVE the recipes you post? Because it means less failure in the kitchen for me. I’ve been able to change many of my old standby recipes to paleo but failed a few times first which is a)frustrating and leaves my family not satisfied and b)costly!

    This one looks good! I’m all over it!

    • Thanks for the kind words. I am going to try and post more recipes, more often. It does suck when something doesn’t turn out. At the same time it’s kind of fun trying new recipes and it is so good that your family is eating better. It’s totally worth it.
