These Brussel Sprouts are Really Good!

We are back from vacation. We were in Arizona for a little over a week. It was so nice to get some time away with family and to just relax. I had plans of blogging from vacation, but let’s be honest. I just wanted to relax.

So I am back and have plans to start posting more here. Not every post will be a recipe and the posts will be a little small sometimes but more than just once a week. I hope I can stick with this goal cause things are more hectic around our household than they have ever been.

I know a lot of people think brussel sprouts are gross. I was one of them. But now that I love to cook and experiment I have opened my taste buds to so many foods that I used to hate. I eat at least half an avocado a day and I used to hate avocados. I know crazy.

This side dish is super simple and you can just have it in the oven while you are making your main dish.

Brussel Sprouts with Apples and Bacon.

Ingredients
Brussel Sprouts (As many as you want)
Apples (I used one, but I only had 20-25 brussel sprouts. You may want more)
3-4 pieces of bacon
Spoonful of Melted Ghee, Coconut Oil or Butter
Balsamic Vinegar
Salt n Pepper

Directions
Heat oven to 350•. Cut the bottoms off of the brussel sprouts and then cut into halves or quarters. It just depends on the size. You want all the cut up pieces to be about the same size. Cut up your apples. I used our apple cutter and corer. Then cut those up into about .5″ pieces. Cut up your bacon into tiny pieces and add all of this to a bowl. Add salt n pepper and then top with your melted ghee. Mix. Put the mixture onto a baking dish lined with parchment for easy cleanup and toss it in the oven for 30-45 minutes. Turn your sprouts half way through. When they start to get nice and brown remove from the oven and drizzle your balsamic vinegar on top and serve.
