This is a great, quick and easy side dish.
Bacon Covered Asparagus
Asparagus (Ends chopped off)
1/2 of an Onion Chopped (Shallots are good too)
4 Pieces of Bacon
3 Cloves of Garlic
Juice from 1/2 a Lemon
Salt n Pepper
First you want to start cooking your bacon in a pan. We will use the leftover grease. Then start boiling some water to cook the asparagus in. Once the water boil add the asparagus for only 4-5 minutes. Just until it becomes bright green. Strain and run under cold water to stop it from cooking anymore. Once the bacon is done, set aside. Add chopped onion and garlic to the bacon grease. I usually like to add about a tablespoon of coconut oil here. This is optional. I like to make this a little creamier and love the taste. Once the onion is translucent add in chopped up bacon. Then add the asparagus. Top with Salt n Pepper, lemon juice and cook a few more minutes. Mix everything together really well then drizzle with some olive oil and serve.
