Sweet Potato Pancakes

Just a recipe today.

Sweet Potato Pancakes

1/2 Cup coconut flour
1/2 teaspoon baking powder
3 eggs
1 can full fat coconut milk
1 Cup of steamed sweet potato
1 Tablespoon coconut oil
Cinnamon and Nutmeg

Cut the sweet potato into chunks and steam until soft. Add the coconut oil to the sweet potato and mash really good. Set aside to cool. Add the flour, baking powder and some cinnamon and nutmeg in a small bowl. In a separate bowl add the eggs and coconut milk and mix. And the sweet potato to the egg and coconut milk and mix. Then you want to slowly stir in the flour mixture. Heat a skillet to medium high and add a little more oil and cook a few minutes on each side.

I also added some crushed pecans to a few of the pancakes and they were really good.

As far as toppings go, some of you might not desire any. If you do we tried some berries, almond butter and even splurged with some honey. I actually wish I had some applesauce on hand. For some reason I think that would be a nice mix.

  2. Cool. Did you guys mind the texture of the pancake? Jamie and Nolan loved these, but I thought the texture was a little off.
