Paleo Casserole

I have been pretty busy lately with stuff for the blog, even though you haven’t seen any of it yet. I have come up with a few more Tshirt designs that will be uploaded to my shop soon. I have also filmed my first episode of Family Living Simple Cooking Show. I might have to come up with a different name, but it is filmed and I am editing it now. The  sound quality is pretty bad, but I am looking into better options. So look out for more cooking episodes to come. Also, I have been working on a children’s book. Not going to divulge to much, but it is Paleo based and is a coloring book. I might have found an illustrator, but the illustrations will take awhile.

So, be on the lookout for more to come from this blog soon.

Now for the recipe.

Paleo Casserole

Ingredients:
2 pounds of ground meat
2 Tablespoons of tomato paste
2 Zucchinis
1 Sweet Potato
2 Carrots
Onion
3 cloves Garlic
Handful of Chopped Mushrooms
3 Eggs
Oregano
Salt n Pepper

Directions:
Turn on your oven to 400•. Slice your zucchini on a mandolin into thin noodles and set aside. Cook our meat on your stove top. While the meat is cooking cut up your carrots on the mandolin and grate you sweet potato with a cheese grater. I find sweet potatoes to hard to slice on my mandolin. When the meat is almost cooked add the tomato paste, onions, garlic and the mushroom. Cook for a few minutes more. Once the meat is cooked add it to a large bowl and add in the zucchini, sweet potato and carrots. Whisk the three eggs and add those to the bowl along with the spices. Mix everything together and add to an 9″x13″ dish, cover with foil and toss in the oven for 20 minutes. Remove foil and cook another 20 minutes and you are all done. Enjoy.

    I have the same mandolin and use it just about everyday…love that thing now that I’m not scared of cutting my fingers off. :-) Sounds like you have some really cool stuff coming up. Wishing you lots of success with all of it! And thanks for sharing your recipe.

  3. I sort of made this tonight and I loved it! I did not make it paleo though since we don’t eat paleo. I added cheese and heavy cream. Even still, it was great to have a grain free casserole.     Thank you for the recipe!!! However, I used 1 pound of ground turkey and 1 pound of ground meat. It came out just delicious!!!:)))
