Caveman Zucchini Boats

Since the weather has been so nice around Washington lately I was inspired by a boat
I saw.

RIGHT

I think I was actually daydreaming about Moses and floating away on an ark. Maybe I should call these Zucchini Arks.

Caveman Zucchini Boats (Arks)
Ingredients:
4-5 nice sized zucchinis
1 pound of italian suasage. Casings removed.
1/2 chopped onion
1 can diced tomatoes drained
handful of chopped olives
1 Cup of chopped mushrooms
3 cloves of chopped garlic
Parsley
Oregano
Basil
Pepper

Directions:
Heat oven to 375•. Cut zucchinis in half and scoop out the insides so it looks like a little canoe. Great, now I am calling them canoes. Set the scooped out guts aside. Place the zucchini open side down onto a pan lined with parchment.  Bake for 15 minutes.

Add the onion to a frying pan with a little coconut oil. Cook until translucent. Add the sausage. When sausage is almost done cooking add the spices. I added about 1 tablespoon of each. Also add the garlic, tomatoes, zucchini guts, olives and mushrooms. Cook a few more minutes.

Your zucchini should be about done. Once the meat mixture is cooked through, scoop it into the zucchini boats and toss back in the oven for about 15-20 minutes. You want the zucchini to be cooked but not mushy.

All done. While the boats were in the oven, I also made a nice little side salad with greens, carrots, celery and cucumber topped with olive oil and pepper.

I know there are probably a few people with children that check this blog out.  And I know it can be a little difficult to feed them the same thing you are eating. So, here is a pic of what we fed our little one. Same thing just without the boat. I actually doubled my recipe so we could have lots of leftovers.
